Asian Rice Noodles with Peanut Sauce

Ingredients

For the sauce:
  • 100g peanut butter
  • 1 garlic glove
  • 1 tsp grated ginger
  • 2 tbsp soy sauce
  • 1/2 tbsp sesame oil
  • 1 tsp rice vinegar
  • some lime juice to taste
  • 1 tbsp maple syrup (instead you could also take honey to sweeten the sauce)
Other ingredients:
  • 1 package rice noodles
  • 1 brokkoli
  • 3 carrots
  • 100g mushrooms
  • 1 garlic glove
  • salt
  • cayenne pepper (or something else to add some spice)
  • 1 lime
  • plant oil to fry

How to do it:

  1. First make the sauce by mixing all the ingredients together, just as simple as that.
  2. Put on some water in a pot and bring to a boil. Add the rice noodles and cook as instructed on the package.
  3. Cut all the vegetables and put them together in a pan. Turn the oven on highest temperature and fry the vegetables with the oil for about 3-5 minutes. This will help the vegetables to not lose their moisture while getting the maximum of their taste.
  4. Add some salt and cayenne pepper and turn off the heat.
  5. Put the noodles, the vegetables and the sauce together in the pan or a pot (if the pan is not big enough) and mix them.
  6. Last add some lime juice.
